I was reintroduced to shrimp scampi about a month ago and have been obsessed ever since – the sauce is just so flavorful and delicious. I tried my hand at this recipe once a week for the past month, and have perfected it to my liking. The entire process doesn’t take more than 30 minutes and ingredients are very basic.
Cooking time: 30 minutes
What you need:
1 ½ pound shrimp
2 tbsp. organic butter
3 tbsp. good olive oil
Cooked pasta
¾ cup chopped organic Parsley
Fresh ground black pepper
Crushed red pepper flakes to taste
½ organic lemon
4 minced garlic cloves
½ dry white wine (you can also use broth)
¾ tsp. salt
Pecorino
For this recipe I used the garlic basil linguine and Callaway Sauvignon Blanc from Trader Joes.
Directions:
- In a large skillet, melt the butter and olive oil. Add in your garlic and cook for a minute
- Add in the wine, black pepper, red pepper, salt. Stir and let the wine reduce by half (about 2 minutes)
- Add in the shrimp and cook until pink (about 2-4 minutes).
- Add lemon, parsley, and a little more black pepper
- Serve on top of cooked pasta
- Add Pecorino to taste
- Enjoy!
