I’m all about quick, easy, and delicious recipes. While I love to experiment with different ingredients and recipes, sometimes I just don’t have the time to do so. This pesto zoodle (zucchini noodle) dish takes a total of 20 minutes to make (maybe less) and is absolutely delicious. Not to mention, it’s low in carbohydrates and good for you!

What you need:
+ 20 oz. Zoodles (you can spiralize these yourself or buy packaged zoodles to save yourself some time)
+ 16 oz. Organic Crimini Mushrooms (sliced)
+ 10 oz. Organic Cherry Tomato (sliced in half)
+ Pesto (homemade is preferred – I make this ahead of time and freeze it to have available on hand)
+ Crushed Black Pepper
+ Nutritional yeast (substitute for cheese), or cheese
+ Salt
Directions:
+ Cook mushrooms and set aside
+ Cook zoodles for 3 minutes and strain
+ Add the zoodles back into the pan with cherry tomatoes, cook for 1 minute
+ Add in mushrooms and pesto and stir
+ Season with salt and pepper
+ Add chicken on top (optional)
+ Season with nutritional yeast or cheese
